Instructions to make Muesli Cookies | Wheat Cookies:
- Preheat the oven to 180° C.
- In a large bowl add egg, sugar, and butter. Whisk for a minute.
- Add in the flour, muesli, baking powder, salt, cinnamon, raisins, stir until well combined.
- Scoop by the tablespoonful onto the prepared baking sheet. (Flatten each cookie slightly with the back of the spoon or leave it as it is).
- Bake the cookies for 10 to 12 minutes, or until the edges begin to darken slightly.
- Let it cool on the baking sheet for 4 to 5 minutes.
- Store in an airtight container for several days or freeze for more extended storage.
Serve as is with soy milk, or plop the bowl in the microwave and eat it warm. Muesli is basically an un-toasted granola, made with raw rolled oats and other rolled grains (if you wish) along with nuts, seeds, and dried fruits. It's not doused in any sweeteners or oils to aid in the baking process - because there is no baking process! So it tends to be a lighter, healthier option than granola. Muesli is like a healthier, lightened-up granola, which isn't to knock my beloved granola but to point out that muesli has significantly less oil and sugar in it.
