- Take 1 large Onion
- Prepare 2 clove Garlic

- Chop the onion, garlic, carrots, parsnips and celery and set aside. Heat up the oil in a pot and add the chopped ingredients.
- Place the lid on the pot, and stir the veggies every once in a while. Once steamed and the onions are translucent, add passata and stock mix.
- Cover again (leaving the lid slightly ajar) and let it simmer for 10 minutes.
- Sprinkle in the mixed herbs, paprika, black pepper and stir. Chop potatoes and add to the mix then give it another good stir.
- Let it simmer for a further 5-10 minutes, checking the softness of the veggies every so often. Add the gammon meat after 10 minutes and return the lid to the pot and let it simmer for 5 more minutes.
- Place spinach at the bottom of the bowl and spoon a serving of stew on top. Lightly toast some chunky bread to serve and enjoy :)
