The ingredients needed to make JAGGERY PANCAKES/SURNELI:
  1. Get 2 cups Dosa rice / Sona masuri
  2. Get 3/4 cup Thick poha/Beaten rice
  3. Make ready 1 tbsp Urad dal / Split black lentil (husked)
  4. Get 1 tsp Fenugreek seeds / Methi
  5. Prepare As needed Buttermilk – to soak all the ingredients
  6. Take For Batter:
  7. Prepare 1/8 tsp Baking soda – (optional)
  8. Prepare 2 tbsp Cooked rice – (optional)
  9. Make ready 2 tbsp Grated coconut
  10. Take 1/2 cup Jaggery – (grated) (use according to your taste)
  11. Prepare 2 tsp Turmeric powder – (soaked in water)
  12. Prepare To taste Salt
  13. Get As needed Oil for shallow frying

Once it's all dissolved, allow it to cool down to room. Jaggery sweetens it with a different way than regular sugar. There is no fermentation needed , so they are easy to make in a jiffy. Jaggery is a completely unrefined sugar made from sugar cane juice or palm sap that is reduced (cooked down) and set into blocks.

Instructions to make JAGGERY PANCAKES/SURNELI:
  1. Soak ingredients - In a mixing bowl take all the ingredients mentioned below, to be soaked.Wash it thoroughly with water 2 to 3 times until the water runs clear.Now add buttermilk to this and mix well. - The ingredients should be completely immersed in buttermilk.Cover and set this aside for minimum 4 hours
  2. Grind to a smooth paste - Now drain the soaked ingredients. Do not discard the buttermilk.In a grinder, add the soaked ingredients, jaggery, soaked turmeric water, cooked rice and grated coconut. - Add appropriate quantity of buttermilk and grind all the ingredients to a smooth paste - Set aside in warm temperature to ferment overnight.
  3. Making dosas - The next morning, lightly whisk the batter. Add very little salt, oil and baking powder to the batter and mix thoroughly. Mix very well
  4. Now heat a dosa tawa/ griddle, pour a small portion of the batter using a ladle and spread it lightly. the dosa should neither be too thick nor thin. - Drizzle some oil around. and flip the other side. Serve hot with butter
