- Firstly boil the potatoes (with it's peel). Next take your veggies that is zuccini, yellow squash, red bell pepper and chop them into pieces.
- Now take yellow bell pepper and tomato (only one) and chop them also into pieces.
- Next make the puree of 2 tomatoes.
- Take a pan. Add 5 spoons full of oil to it.
- Add veggies into the pan. Saute them until they are 80% cooked.
- After they are 80% cooked add salt and tomato puree to it. Mix it well and cover it with the lid for at least 5 - 7 mins.
- Till then take your potatoes, keep them vertically and cut them into two equal halves (with it's peel). Scoop them from the middle (as I have done… 😋😋) Do the same with the other three.
- Add the scooped out potato into the pan. And add some red chilli powder to and Maggi masala to it.
- When your mixture is ready, place it into the potato👇.
- Fill all your mixture in other potatoes also. Now take the yellow and red bell peppers, cut them into two parts. Fill them also with this veggie mixture.
- Add some (not more) mozzarella cheese on the potatoes and Capsicum.
- Take olives, cut them into the shape of round (for eyes) Now take the leftover red bell pepper and cut small triangle shaped piece out of it (for the nose).
- Place them onto the mozzarella cheese.
- Now put the potatoes and Capsicums in the oven for 5 to 7 mins under 180°C.
- After that slowly take them out and place some coriander leaves up of the olives (for hairs)
- And it's ready, Dangerous but yummy, healthy jacket potatoes and Capsicums.
