Palong shaak in Bengali stands for spinach (or palak) and ghonto is referred to as mish-mash or mixture. This dish is basically a mixture of spinach, veggies, sun-dried dumplings (vadi) and spices. Palong Shaak-er Ghonto is a vegetarian delight with it's savory and sweet taste due to the amalgamation of different vegetables like, Potatoes, Brinjal, Pumpkins, Cauliflowers etc. Once you get your spinach or Palong shak 'squeaky clean', you can just hold them in a bunch over a large bowl and cut with a pair of large scissors.

- Soak the spinach for 15 minutes and rinse thoroughly several times before using.separate leaves from the stalks.
- Pile spinach into a pan and add chick pea.sprinkle some salt and steam on medium heat for 8 minutes.
- Take another pan and heat oil add dried red chillis, Bay leaves, cumin seeds.stir the spices and add potato, bringal, pumpkin.remember to keep heat low, stir regularly and cover the pan.
- Lightly squeeze water from spinach and sprinkle on the vegetables in to the pan and mix together nicely and cook for 5 minutes.
- Add sugar and continue cooking on low heat until veggies are done.
- Spinach vegetables Curry is ready. garnish with some coriander leaves.
Palong Shaker Ghonto requires only roughly chopped spinach, so this way the Saag can be chopped real fast.
