The ingredients needed to make Sweet Mango Pickle:
- Get 1 &1/2 kg raw mangoes (also called Amiya in up)
- Prepare 1 &1/2 kg jaggery
- Take 3-4 Tbsp ghee
- Take 2 Tbsp onion seeds (Kalaungi)
- Make ready 3 Tbsp Fennel seeds (Badi saunf)
- Get 2 Tbsp red chilli powder
- Make ready 1 Tbsp salt
Instructions to make Sweet Mango Pickle:
- Firstly wash the raw mangoes nicely & peel them.With khife or peeler scratch all the pulp of mangoes in pieces.
- In a heavy bottom large pan(I'll prefer iron kadai) heat 3 tbsp ghee,now add fennel seeds, Kalaungi, Chilli powder,salt & mix it all for 8-10 sec. only.Then add mango pieces,fry them for 2 min & cover the pan with lid.Gas flame must be low.
- Scrumble the jaggery into very small pieces or in powder form.After 5 min add jaggery to the mangoes & let them cook together in low flame.
- After every 15-20 min cheak the pan & stir the mixture.It'll take at least 1&1/2-2 hours to get ready because mangoes will cook with jaggery in steam at only low flame.
- Note- Don't dry the mixture too much,it must be little flowing because when it'll cool down completely it will absorb some more moisture.
