Instructions to make Sprouted Finger Millet Stuff Paratha:
- Soak the ragi for ten to twelve hours and leave it to sprout for two to three days by wraping it in muslin cloth. Then dry the ragi in sun for 2 days and make flour.
- For paratha flour, mix ragi flour, wheat flour, oil with salt and sesame according to taste and mix it with the left out paneer water and make a soft dough. Leave the flour for 10-15 minutes.
- In a kadai, fry onion with oil, cumin and asafoetida(hing). After the onion is roasted, add salt, and green chillies to taste.Add chana flour,crumbled paneer and garam masala and mix. Once the masala cools down add curd & coriander to it. The stuffing masala is ready.
- Calcium rich creamy masala is ready!!
- Now make stuffed paratha inside the flour. Slowly heat the paratha ghee from the mixture and fry till it becomes golden. Paratha is now ready to serve with masala curd.
