  1. To make grated mango pickle,combine the grated mangoes,add termeric powder,add salt and mix it well.place the mangoes on a sieve,when cool and dry.now in a bowl add grated mango,add grated garlic,add kalaunzi
  2. Mix it well.and keep aside.now take a tawa add fenugreek seeds,add cumin seeds
  3. Add fennel seeds dry roast for 5-7 min.on low flame.now all the roasted ingredients put into the jar and coursly grind it.achar masala is ready.
  4. Now add achar masala, add kalaunzi,add salt,add red chilli powder
  5. Add asafoetida mix it again.now take a jar and fill the jar with pickle
  6. Now add oil,aroma is very strong.cool to room temperature pack this tightly in to jar.the oil should come above the mango mixture.let the pickle mature for another 2-4 days before you consume it.for all pickles,ensure that it stays covered with oil,that they stays good throughout the year.pickle is ready.
